I remember the yummy and hot Carrot/Gajar Halwa I happened to eat from one of the Dabas a street shop in India . I went grocery shopping the other day and happen to see the bright fresh Carrots which tempted me to eat that halwa again. I came to my pad and happen to search online for recipes. It blew my mind seeing the big list of ingredients and the time it takes to cook it. All my cravings vanished for a moment. But I didn't give up and decided to make it. Atleast something close to what I used to eat. And a delicious Simple,Superfast Carrot/Gajar Halwa recipe was born.
Ingredients
4 Cups of Carrots (Grate them a little big so that it wont disappear when fully cooked)
1/2 cup of Curdled milk/Ricotta Cheese/Koya
2 Cups Whole milk
1 Cup Sugar
2 Tbsp of Ghee(Clarified Butter)
1 Tbsp Chopped Mixed nuts
1 tsp of Cardamom Powder
Directions
- In a heavy bottomed pan roast the dry nuts in ghee and set it aside
- Saute the carrots in the same pan in a medium flame for about 10 minutes
- Add the milk and let it saute on high flame until all the milk is dried up
- Add the sugar now and wait for it to dissolve completely
- Add Curdled milk and cook for few more minutes until it comes off the pan
- Add the cardamom powder and garnish with roasted nuts
